  1. Take Ground turkey
  2. You need 15 oz can tomato sauce
  3. Provide diced red bell pepper
  4. Provide diced green bell pepper
  5. Prepare small onion
  6. Prepare diced tomatoes (I used Hunt's cans of basil, garlic, and oregano seasoned diced tomatoes)
  7. Prepare brown or white rice (I used brown)
  8. Prepare 14 oz can of beef broth
  9. Take dried basil
  10. Get oregano flakes
  11. Get dried parsley
  12. Use to 2 cups of water
Instructions to make Stuffed Pepper Soup:
  1. Brown and season the ground turkey with salt and pepper. Put in crock pot when finished.
  2. Seed and dice both of the peppers and the onion. Add to the crock pot.
  3. Add both cans of diced tomatoes, tomato sauce, and beef broth to the crock pot.
  4. Add the rice, oregano, basil, and parsley to the crock pot.
  5. Mix everything thoroughly.
  6. Cook on HIGH 4-6 hours.
  7. Add water (or more broth!) to the soup while it is cooking and thickening if you would like a runnier soup. (The rice will really expand and suck up a lot of liquid!)
